Pesto Chicken

Ingredients
- 1½ lb boneless, skinless chicken breasts
- ½ cup basil pesto
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup cherry tomatoes (optional)
- 2 tbsp Parmesan cheese (optional)
Steps
- Pat chicken breasts dry and season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken for 5-7 minutes per side, or until golden brown and cooked through.
- Reduce heat to low, spoon pesto over the chicken, and gently toss to coat.
- If desired, add cherry tomatoes to the skillet and cook for 2-3 minutes until slightly softened.
