Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • ½ cup basil pesto
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup cherry tomatoes (optional)
  • 2 tbsp Parmesan cheese (optional)

Steps

  1. Pat chicken breasts dry and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear chicken for 5-7 minutes per side, or until golden brown and cooked through.
  4. Reduce heat to low, spoon pesto over the chicken, and gently toss to coat.
  5. If desired, add cherry tomatoes to the skillet and cook for 2-3 minutes until slightly softened.
  6. Remove from heat, garnish with Parmesan cheese if using, and serve immediately.
