Italian Sausage with Peppers and Onions

Ingredients

  • 1½ lb Italian sausage links
  • 3 medium Bell peppers (red, green, or yellow)
  • 1 large Yellow onion
  • 3 cloves Garlic
  • 2 tbsp Olive oil
  • 14½ oz Crushed tomatoes (optional)
  • ½ tsp Dried oregano
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • 4 Hoagie rolls (optional)
  • 2 tbsp Fresh parsley (optional)

Steps

  1. Slice bell peppers and onion into strips. Mince garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Add Italian sausage links and brown on all sides, about 8-10 minutes. Remove sausage and set aside.
  3. Add sliced peppers and onions to the same skillet. Cook, stirring occasionally, until softened, about 8-10 minutes. Add minced garlic and cook for another minute until fragrant.
  4. Return sausage to the skillet with the vegetables. If using, stir in crushed tomatoes, oregano, salt, and pepper. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, or until sausage is cooked through and vegetables are tender.
  5. Serve hot, either as is or on hoagie rolls. Garnish with fresh parsley if desired.
