Lamb Kofta Kebabs
Flavorful ground lamb kofta kebabs, seasoned with herbs and spices, are grilled or pan-fried to perfection and often served with a cooling yogurt sauce.
Ingredients
- 1½ lb ground lamb
- ½ onion
- ¼ cup fresh parsley
- 2 tbsp fresh mint
- 3 clove garlic
- 1½ tsp cumin
- 1 tsp coriander
- ½ tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
- 8 wooden skewers (optional)
- 1 cup Greek yogurt (optional)
- ½ lemon (optional)
- ¼ cucumber (optional)
Steps
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Finely grate the onion, mince the parsley, mint, and garlic. In a large bowl, combine the ground lamb with the grated onion, minced parsley, mint, garlic, cumin, coriander, paprika, salt, and pepper. Mix until just combined, being careful not to overmix.
- Divide the mixture into 8 equal portions. Form each portion into an elongated oval shape around a skewer, pressing firmly to ensure it adheres.
- Preheat your grill to medium-high heat or a large skillet over medium-high heat with olive oil.
- Grill or pan-fry the kofta kebabs for 3-4 minutes per side, or until cooked through and nicely browned.
- While kebabs cook, prepare an optional yogurt sauce by mixing Greek yogurt with a squeeze of lemon juice and finely diced cucumber.
- Serve the lamb kofta kebabs hot, optionally with the yogurt sauce.
