Lemon Garlic Shrimp Pasta

Ingredients

  • 12 oz linguine
  • 1½ lb large shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 4 clove garlic, minced
  • 1 lemon, juiced and zested
  • ½ cup chicken broth
  • ¼ cup fresh parsley, chopped
  • ½ tsp red pepper flakes (optional)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup Parmesan cheese, grated (optional)

Steps

  1. Cook linguine according to package directions until al dente; reserve 1 cup of pasta water, then drain and set aside.
  2. While pasta cooks, pat shrimp dry and season with salt and pepper.
  3. Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using) and cook for 1 minute until fragrant.
  4. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from the skillet and set aside.
  5. Deglaze the skillet with chicken broth and lemon juice, scraping up any browned bits. Bring to a simmer.
  6. Add the cooked linguine, lemon zest, and half of the chopped parsley to the skillet. Toss to combine, adding reserved pasta water as needed to create a light sauce.
  7. Return shrimp to the skillet and toss gently. Serve immediately, garnished with remaining fresh parsley and Parmesan cheese if desired.
