Lemon Garlic Shrimp Pasta
A light and flavorful pasta dish featuring succulent shrimp tossed with garlic, lemon, and fresh parsley.
Ingredients
- 12 oz linguine
- 1½ lb large shrimp, peeled and deveined
- 3 tbsp olive oil
- 4 clove garlic, minced
- 1 lemon, juiced and zested
- ½ cup chicken broth
- ¼ cup fresh parsley, chopped
- ½ tsp red pepper flakes (optional)
- ½ tsp salt
- ¼ tsp black pepper
- ¼ cup Parmesan cheese, grated (optional)
Steps
- Cook linguine according to package directions until al dente; reserve 1 cup of pasta water, then drain and set aside.
- While pasta cooks, pat shrimp dry and season with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using) and cook for 1 minute until fragrant.
- Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from the skillet and set aside.
- Deglaze the skillet with chicken broth and lemon juice, scraping up any browned bits. Bring to a simmer.
- Add the cooked linguine, lemon zest, and half of the chopped parsley to the skillet. Toss to combine, adding reserved pasta water as needed to create a light sauce.
- Return shrimp to the skillet and toss gently. Serve immediately, garnished with remaining fresh parsley and Parmesan cheese if desired.
