Lentil Dal

Ingredients

  • 1½ cup red lentils
  • 4 cup water
  • 2 tbsp ghee (optional)
  • 2 tbsp vegetable oil
  • 1 medium onion
  • 3 clove garlic
  • 1 inch ginger
  • 1 tsp cumin seeds
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • 1 tsp salt
  • ½ cup canned diced tomatoes (optional)
  • ¼ cup fresh cilantro (optional)
  • 4 lemon wedge (optional)

Steps

  1. Rinse the red lentils thoroughly under cold water until the water runs clear. Set aside.
  2. Heat oil (or ghee) in a large pot or Dutch oven over medium heat. Add cumin seeds and let them sizzle for 30 seconds until fragrant.
  3. Add chopped onion and sauté until softened, about 5-7 minutes. Stir in minced garlic and grated ginger, cooking for another minute until aromatic.
  4. Add turmeric powder, coriander powder, and garam masala. Cook for 30 seconds, stirring constantly.
  5. Stir in the rinsed lentils, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until lentils are tender and have thickened. Stir occasionally to prevent sticking.
  6. If using, stir in diced tomatoes during the last 5 minutes of cooking.
  7. Taste and adjust seasoning as needed. Serve hot, garnished with fresh cilantro and a lemon wedge, if desired.
