Massaman Beef Curry
A rich and aromatic Thai Massaman beef curry, slow-cooked with tender beef, potatoes, and peanuts in a creamy coconut sauce.
Ingredients
- 600 g stewing beef
- 85 g peanuts
- 400 ml coconut cream
- 4 tbsp Massaman curry paste
- 450 g waxy potatoes
- 1 onion
- 4 lime leaves
- 1 cinnamon stick
- 1 tbsp tamarind paste
- 1 tbsp brown sugar
- 1 tbsp fish sauce
- 1 red chili (optional)
- 2 cup jasmine rice (optional)
Steps
- Preheat oven to 200C (400F). Roast peanuts on a baking tray for 5 minutes until golden, then chop roughly. Reduce oven temperature to 180C (350F).
- Heat 2 tbsp coconut cream in a large lidded casserole dish over medium heat. Add curry paste and fry for 1 minute.
- Stir in beef strips and cook until well coated and sealed.
- Add remaining coconut cream, 200ml water, potatoes, onion, lime leaves, cinnamon stick, tamarind paste, brown sugar, fish sauce, and most of the chopped peanuts to the dish.
- Bring to a simmer, then cover and transfer to the preheated oven. Cook for 2 hours until the beef is tender.
- Serve the curry hot, garnished with sliced red chili and the remaining peanuts, alongside jasmine rice.
