Thai Chicken Cakes with Sweet Chili Sauce

Ingredients
- 1.3 lb chicken breast
- 2 clove garlic
- 1 inch ginger
- ½ onion
- ¼ cup fresh cilantro
- 1 green chili
- 2 tbsp olive oil
- ½ cup sweet chili sauce
- 1 lime (optional)
- 2 green onion (optional)
- 1 red chili (optional)
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Roughly chop chicken breast, garlic, ginger, onion, cilantro, and green chili. Combine in a food processor with salt and pepper.
- Pulse until the mixture is finely ground and well combined, but not a paste.
- Shape the mixture into 8 small, flat cakes (about 2 inches in diameter).
- Heat olive oil in a large frying pan over medium heat.
- Fry the chicken cakes for 6-8 minutes, flipping once, until golden brown and cooked through.
- Serve hot with sweet chili sauce, and garnish with lime wedges, chopped green onions, and sliced red chili if desired.
