Thai Chicken Cakes with Sweet Chili Sauce

Ingredients

  • 1.3 lb chicken breast
  • 2 clove garlic
  • 1 inch ginger
  • ½ onion
  • ¼ cup fresh cilantro
  • 1 green chili
  • 2 tbsp olive oil
  • ½ cup sweet chili sauce
  • 1 lime (optional)
  • 2 green onion (optional)
  • 1 red chili (optional)
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Roughly chop chicken breast, garlic, ginger, onion, cilantro, and green chili. Combine in a food processor with salt and pepper.
  2. Pulse until the mixture is finely ground and well combined, but not a paste.
  3. Shape the mixture into 8 small, flat cakes (about 2 inches in diameter).
  4. Heat olive oil in a large frying pan over medium heat.
  5. Fry the chicken cakes for 6-8 minutes, flipping once, until golden brown and cooked through.
  6. Serve hot with sweet chili sauce, and garnish with lime wedges, chopped green onions, and sliced red chili if desired.
