Mexican Pizza
A fun and flavorful twist on pizza, featuring crispy tortillas layered with seasoned ground beef, refried beans, cheese, and fresh toppings.
Ingredients
- 1 lb ground beef
- 1 oz taco seasoning
- 8 flour tortillas
- 16 oz refried beans
- 2 cups shredded cheddar cheese
- ½ cup diced tomatoes (optional)
- ¼ cup sliced black olives (optional)
- 2 green onions (optional)
- ½ cup sour cream (optional)
- ½ cup salsa (optional)
- 2 tbsp vegetable oil
Steps
- Preheat oven to 375°F (190°C). Brown ground beef in a skillet over medium-high heat, then drain fat and stir in taco seasoning according to package directions.
- Lightly brush both sides of 4 tortillas with vegetable oil and bake for 5-7 minutes, or until lightly golden and crisp. Repeat with remaining 4 tortillas. Set aside.
- Spread a thin layer of refried beans on each of 4 crispy tortillas. Top with the seasoned ground beef.
- Place the remaining 4 crispy tortillas on top of the beef layer to create a 'sandwich'. Spread a thin layer of salsa (if using) and then sprinkle generously with shredded cheddar cheese.
- Bake for 8-10 minutes, or until the cheese is melted and bubbly. Remove from oven.
- Garnish with diced tomatoes, black olives, green onions, and a dollop of sour cream if desired. Slice into wedges and serve immediately.
