One-Pot Taco Pasta
This easy one-pot taco pasta combines savory ground beef, tender pasta, and classic taco flavors in a creamy, cheesy sauce for a comforting weeknight meal.
Ingredients
- 1 lb ground beef
- 1 onion
- 2 cloves garlic
- 2 tbsp taco seasoning
- 14½ oz diced tomatoes
- 8 oz tomato sauce
- 3 cups beef broth
- 8 oz uncooked pasta
- 1 cup shredded cheddar cheese
- ½ cup sour cream (optional)
- ¼ cup cilantro (optional)
Steps
- Brown ground beef in a large pot or Dutch oven over medium-high heat, breaking it apart with a spoon. Drain any excess fat.
- Add chopped onion and minced garlic to the pot and cook until softened, about 3-5 minutes.
- Stir in the taco seasoning, diced tomatoes, tomato sauce, and beef broth. Bring to a simmer.
- Add the uncooked pasta to the pot, ensuring it is mostly submerged in the liquid. Cover and cook for 10-12 minutes, or until pasta is al dente, stirring occasionally to prevent sticking.
- Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
- Serve hot, garnished with a dollop of sour cream and fresh cilantro, if desired.
