Ingredients

  • 1 lb ground beef
  • 1 onion
  • 2 cloves garlic
  • 2 tbsp taco seasoning
  • 14½ oz diced tomatoes
  • 8 oz tomato sauce
  • 3 cups beef broth
  • 8 oz uncooked pasta
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream (optional)
  • ¼ cup cilantro (optional)

Steps

  1. Brown ground beef in a large pot or Dutch oven over medium-high heat, breaking it apart with a spoon. Drain any excess fat.
  2. Add chopped onion and minced garlic to the pot and cook until softened, about 3-5 minutes.
  3. Stir in the taco seasoning, diced tomatoes, tomato sauce, and beef broth. Bring to a simmer.
  4. Add the uncooked pasta to the pot, ensuring it is mostly submerged in the liquid. Cover and cook for 10-12 minutes, or until pasta is al dente, stirring occasionally to prevent sticking.
  5. Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
