Migas

A rustic Spanish dish of fried breadcrumbs, garlic, and pork, perfect for a hearty meal.

Ingredients

  • 1 lb crusty bread
  • ½ cup olive oil
  • 6 clove garlic
  • 4 oz pork belly (optional)
  • ¼ cup water
  • ½ tsp black pepper
  • ½ tsp salt

Steps

  1. Tear or cut the bread into small, bite-sized pieces. Sprinkle lightly with cold water, cover with a damp cloth, and let sit for 30 minutes.
  2. Heat olive oil in a large, deep pan or skillet over medium heat. Add the whole garlic cloves (with skins on, make a small cut in each) and cook for 5 minutes until fragrant. Remove garlic and set aside.
  3. If using, add diced pork to the same pan and cook until crispy. Remove pork and set aside, leaving the rendered fat in the pan.
  4. Add the prepared bread pieces to the pan with the oil. Cook over medium-low heat, stirring constantly, for 15 minutes, until the bread begins to brown and crisp.
  5. Return the garlic cloves (and pork, if using) to the pan with the bread. Season with salt and black pepper.
  6. Continue stirring and cooking for another 20-25 minutes, or until the bread is golden brown, soft inside, and slightly crispy on the outside.
