Migas
A rustic Spanish dish of fried breadcrumbs, garlic, and pork, perfect for a hearty meal.
Ingredients
- 1 lb crusty bread
- ½ cup olive oil
- 6 clove garlic
- 4 oz pork belly (optional)
- ¼ cup water
- ½ tsp black pepper
- ½ tsp salt
Steps
- Tear or cut the bread into small, bite-sized pieces. Sprinkle lightly with cold water, cover with a damp cloth, and let sit for 30 minutes.
- Heat olive oil in a large, deep pan or skillet over medium heat. Add the whole garlic cloves (with skins on, make a small cut in each) and cook for 5 minutes until fragrant. Remove garlic and set aside.
- If using, add diced pork to the same pan and cook until crispy. Remove pork and set aside, leaving the rendered fat in the pan.
- Add the prepared bread pieces to the pan with the oil. Cook over medium-low heat, stirring constantly, for 15 minutes, until the bread begins to brown and crisp.
- Return the garlic cloves (and pork, if using) to the pan with the bread. Season with salt and black pepper.
- Continue stirring and cooking for another 20-25 minutes, or until the bread is golden brown, soft inside, and slightly crispy on the outside.
