Moroccan Carrot Soup

Ingredients

  • 6 carrots
  • 1 onion
  • 4 clove garlic
  • 1 tsp cumin
  • ½ tsp cilantro
  • 1 tbs olive oil
  • ¼ tsp garam masala
  • 1 tsp lemon juice
  • 2 cup water
  • ½ tsp salt (optional)

Steps

  1. Preheat oven to 180° C (350° F).
  2. Combine chopped carrots, sliced onion, minced garlic, cumin, cilantro, and olive oil in a bowl. Mix well and spread on a baking tray.
  3. Roast for 10-12 minutes, or until carrots are tender. Remove from oven and let cool slightly.
  4. Transfer the roasted vegetables to a blender with 1 cup of water and blend until smooth. Strain the mixture into a bowl if desired for an extra smooth texture.
  5. Heat the strained carrot mixture in a non-stick pan. Add the remaining 1 cup of water and bring to a boil. Stir in garam masala and salt to taste.
  6. Remove from heat, stir in lemon juice, and mix well.
  7. Serve hot.
