Moroccan Carrot Soup
A vibrant and aromatic Moroccan carrot soup, featuring roasted carrots, warm spices, and a hint of lemon, perfect for a comforting meal.
Ingredients
- 6 carrots
- 1 onion
- 4 clove garlic
- 1 tsp cumin
- ½ tsp cilantro
- 1 tbs olive oil
- ¼ tsp garam masala
- 1 tsp lemon juice
- 2 cup water
- ½ tsp salt (optional)
Steps
- Preheat oven to 180° C (350° F).
- Combine chopped carrots, sliced onion, minced garlic, cumin, cilantro, and olive oil in a bowl. Mix well and spread on a baking tray.
- Roast for 10-12 minutes, or until carrots are tender. Remove from oven and let cool slightly.
- Transfer the roasted vegetables to a blender with 1 cup of water and blend until smooth. Strain the mixture into a bowl if desired for an extra smooth texture.
- Heat the strained carrot mixture in a non-stick pan. Add the remaining 1 cup of water and bring to a boil. Stir in garam masala and salt to taste.
- Remove from heat, stir in lemon juice, and mix well.
- Serve hot.
