Spicy North African Potato Salad

Ingredients

  • 1½ lb small potatoes
  • 1 tsp harissa spice
  • 2 tsp olive oil
  • 2 tbsp lemon juice
  • 4 green onions
  • 6 oz arugula
  • 3 oz feta cheese
  • 2 tbsp fresh mint
  • 2 tbsp pine nuts (optional)
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Boil potatoes in a pot of cold salted water for 20 minutes, or until tender when pierced with a knife. Drain and roughly chop in half.
  2. While potatoes cook, whisk together harissa spice, olive oil, lemon juice, salt, and pepper in a small bowl to make the dressing.
  3. Add the warm chopped potatoes and sliced green onions to the dressing and toss to coat.
  4. Arrange the arugula in a large salad bowl or on a platter.
  5. Top the arugula with the dressed potato mixture.
  6. Crumble feta over the salad, sprinkle with chopped mint and pine nuts (if using), then serve.
