Spicy North African Potato Salad
A vibrant Moroccan-inspired potato salad featuring tender potatoes tossed in a zesty harissa dressing, fresh arugula, salty feta, and crunchy pine nuts.
Ingredients
- 1½ lb small potatoes
- 1 tsp harissa spice
- 2 tsp olive oil
- 2 tbsp lemon juice
- 4 green onions
- 6 oz arugula
- 3 oz feta cheese
- 2 tbsp fresh mint
- 2 tbsp pine nuts (optional)
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Boil potatoes in a pot of cold salted water for 20 minutes, or until tender when pierced with a knife. Drain and roughly chop in half.
- While potatoes cook, whisk together harissa spice, olive oil, lemon juice, salt, and pepper in a small bowl to make the dressing.
- Add the warm chopped potatoes and sliced green onions to the dressing and toss to coat.
- Arrange the arugula in a large salad bowl or on a platter.
- Top the arugula with the dressed potato mixture.
- Crumble feta over the salad, sprinkle with chopped mint and pine nuts (if using), then serve.
