One-Pot Lemon Garlic Shrimp Pasta

Ingredients

  • 12 oz linguine
  • 1½ lb large shrimp, peeled and deveined
  • 4 cup chicken broth
  • 1 lemon, juiced and zested
  • 4 clove garlic, minced
  • 2 tbsp olive oil
  • ½ tsp red pepper flakes (optional)
  • ¼ cup fresh parsley, chopped (optional)
  • 1 tsp salt
  • ½ tsp black pepper

Steps

  1. In a large pot or Dutch oven, combine the uncooked linguine, chicken broth, olive oil, minced garlic, lemon zest, salt, and pepper.
  2. Bring the mixture to a boil over medium-high heat, then reduce heat to medium-low, cover, and simmer for 8-10 minutes, stirring occasionally, until the pasta is nearly al dente.
  3. Stir in the shrimp and lemon juice. Continue to cook, uncovered, for another 3-5 minutes, or until the shrimp are pink and cooked through and the pasta is al dente, stirring frequently.
  4. Remove from heat. If desired, stir in red pepper flakes.
  5. Garnish with fresh chopped parsley before serving.
