One-Pot Lemon Garlic Shrimp Pasta
This bright and zesty one-pot pasta dish features succulent shrimp, al dente pasta, and a flavorful lemon-garlic sauce, perfect for a quick weeknight meal.
Ingredients
- 12 oz linguine
- 1½ lb large shrimp, peeled and deveined
- 4 cup chicken broth
- 1 lemon, juiced and zested
- 4 clove garlic, minced
- 2 tbsp olive oil
- ½ tsp red pepper flakes (optional)
- ¼ cup fresh parsley, chopped (optional)
- 1 tsp salt
- ½ tsp black pepper
Steps
- In a large pot or Dutch oven, combine the uncooked linguine, chicken broth, olive oil, minced garlic, lemon zest, salt, and pepper.
- Bring the mixture to a boil over medium-high heat, then reduce heat to medium-low, cover, and simmer for 8-10 minutes, stirring occasionally, until the pasta is nearly al dente.
- Stir in the shrimp and lemon juice. Continue to cook, uncovered, for another 3-5 minutes, or until the shrimp are pink and cooked through and the pasta is al dente, stirring frequently.
- Remove from heat. If desired, stir in red pepper flakes.
- Garnish with fresh chopped parsley before serving.
