One-Skillet Lasagna

One-Skillet Lasagna

Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion
  • 2 cloves garlic
  • 28 oz crushed tomatoes
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 6 sheets lasagna noodles
  • 15 oz ricotta cheese
  • 2 cups mozzarella cheese
  • ¼ cup Parmesan cheese (optional)
  • ¼ cup fresh basil (optional)
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Brown ground beef in a large skillet over medium-high heat, breaking it apart, then drain any excess fat and set aside.
  2. Add olive oil to the skillet, then sauté chopped onion until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more.
  3. Return the beef to the skillet. Add crushed tomatoes, tomato paste, beef broth, oregano, salt, and pepper. Bring to a simmer.
  4. Break lasagna noodles into 2-3 inch pieces and stir them into the sauce. Ensure noodles are mostly submerged. Cover and simmer for 15-20 minutes, stirring occasionally, until noodles are tender and sauce has thickened.
  5. Stir in ricotta cheese in dollops, then sprinkle mozzarella cheese over the top. Cover and cook for 5 minutes, or until mozzarella is melted and bubbly.
  6. Garnish with grated Parmesan cheese and fresh basil, if desired, before serving directly from the skillet.
