One-Skillet Sausage and Gnocchi
A comforting and easy one-skillet meal featuring savory Italian sausage, tender potato gnocchi, and fresh spinach in a creamy tomato sauce.
Ingredients
- 1 lb Italian sausage
- 1 tbsp Olive oil
- ½ Yellow onion
- 3 clove Garlic
- 14½ oz Canned diced tomatoes
- ¾ cup Chicken broth
- ½ cup Heavy cream
- 18 oz Potato gnocchi
- 5 oz Fresh spinach
- ¼ cup Parmesan cheese (optional)
- ½ tsp Salt
- ¼ tsp Black pepper
- ¼ tsp Red pepper flakes (optional)
Steps
- Remove sausage from casings and crumble. Heat olive oil in a large skillet over medium-high heat. Add sausage and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Drain excess fat and set sausage aside.
- Add chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for another minute until fragrant.
- Pour in diced tomatoes (undrained) and chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Stir in heavy cream, salt, pepper, and red pepper flakes (if using). Add the gnocchi and cooked sausage. Bring back to a gentle simmer, cover, and cook for 5-7 minutes, or until gnocchi are tender, stirring occasionally.
- Uncover the skillet and stir in the fresh spinach until wilted, about 1-2 minutes.
- Serve immediately, garnished with grated Parmesan cheese if desired.
