One-Skillet Sausage and Gnocchi

Ingredients

  • 1 lb Italian sausage
  • 1 tbsp Olive oil
  • ½ Yellow onion
  • 3 clove Garlic
  • 14½ oz Canned diced tomatoes
  • ¾ cup Chicken broth
  • ½ cup Heavy cream
  • 18 oz Potato gnocchi
  • 5 oz Fresh spinach
  • ¼ cup Parmesan cheese (optional)
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • ¼ tsp Red pepper flakes (optional)

Steps

  1. Remove sausage from casings and crumble. Heat olive oil in a large skillet over medium-high heat. Add sausage and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Drain excess fat and set sausage aside.
  2. Add chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for another minute until fragrant.
  3. Pour in diced tomatoes (undrained) and chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
  4. Stir in heavy cream, salt, pepper, and red pepper flakes (if using). Add the gnocchi and cooked sausage. Bring back to a gentle simmer, cover, and cook for 5-7 minutes, or until gnocchi are tender, stirring occasionally.
  5. Uncover the skillet and stir in the fresh spinach until wilted, about 1-2 minutes.
  6. Serve immediately, garnished with grated Parmesan cheese if desired.
