Pad See Ew
A classic Thai stir-fry featuring wide rice noodles, tender chicken, Chinese broccoli, and a savory-sweet dark soy sauce.
Ingredients
- 12 oz wide rice noodles
- 4 tbsp dark soy sauce
- 4 tbsp oyster sauce
- 4 tsp soy sauce
- 4 tsp white vinegar
- 4 tsp sugar
- 4 tbsp water
- 4 tbsp peanut oil
- 4 clove garlic
- 2 cup chicken breast
- 2 egg
- 8 cup Chinese broccoli
Steps
- Prepare rice noodles according to package directions.
- In a small bowl, whisk together dark soy sauce, oyster sauce, soy sauce, white vinegar, sugar, and water to create the sauce.
- Heat peanut oil in a large wok or skillet over high heat. Add minced garlic and stir-fry for 15 seconds until fragrant.
- Add sliced chicken and Chinese broccoli stems to the wok. Stir-fry until the chicken is lightly golden and cooked through.
- Push the chicken and broccoli to one side of the wok. Crack the egg into the empty space and scramble until cooked, then mix with the chicken and broccoli.
- Add the cooked noodles, Chinese broccoli leaves, and the prepared sauce to the wok. Toss gently until the noodles are evenly coated and the leaves are wilted.
- Serve immediately and enjoy your homemade Pad See Ew.
