Pad Thai with Shrimp
A classic Thai stir-fry featuring tender rice noodles, succulent shrimp, and a tangy, spicy, and sweet sauce, garnished with fresh herbs and crunchy peanuts.
Ingredients
- ½ lb rice noodles
- 5 limes
- ½ tsp cayenne pepper
- 2 tsp muscovado sugar
- 2 tbsp fish sauce
- 2 tbsp vegetable oil
- ½ lb tiger shrimp
- 4 green onions
- 5 oz bean sprouts
- 1 oz peanuts
- ½ cup cilantro
- 2 tbsp sweet chili sauce (optional)
Steps
- Soak rice noodles in boiling water for 4 minutes, then drain and rinse with cold water.
- In a bowl, combine lime juice (from 3 limes), cayenne pepper, muscovado sugar, and fish sauce. Mix well.
- Heat vegetable oil in a large pan or wok over medium-high heat. Add shrimp and cook until warmed through.
- Add sliced green onions and drained noodles to the pan. Toss to combine.
- Pour the lime juice mixture over the noodles and shrimp. Stir in bean sprouts and half of the peanuts and cilantro.
- Cook for 1 minute, stirring constantly, until all ingredients are heated through.
- Transfer to a serving dish, garnish with remaining peanuts and cilantro, and serve with lime wedges (from 2 limes) and sweet chili sauce, if desired.
