Skillet Lasagna

Ingredients

  • 1 lb ground beef
  • 1 medium onion
  • 3 cloves garlic
  • 28 oz crushed tomatoes
  • 2 tbsp tomato paste
  • 1½ cup beef broth
  • 6 sheets lasagna noodles
  • 15 oz ricotta cheese
  • 1½ cup mozzarella cheese
  • ½ cup Parmesan cheese
  • 2 tbsp fresh parsley (optional)
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Brown ground beef in a large skillet over medium-high heat, breaking it apart, then drain excess fat and set aside.
  2. Add olive oil to the same skillet, then sauté chopped onion until softened, about 5 minutes. Stir in minced garlic and oregano, cooking for 1 minute more.
  3. Return beef to the skillet. Stir in crushed tomatoes, tomato paste, beef broth, salt, and pepper. Bring to a simmer.
  4. Break lasagna noodles into 2-3 inch pieces and stir them into the sauce. Ensure noodles are mostly submerged. Cover and simmer for 15-20 minutes, or until noodles are tender, stirring occasionally to prevent sticking.
  5. While noodles cook, combine ricotta cheese, half of the Parmesan, and half of the mozzarella in a small bowl.
  6. Uncover the skillet. Drop spoonfuls of the ricotta mixture over the noodles, then sprinkle with the remaining mozzarella and Parmesan cheese.
  7. Cover again and cook for 5-7 minutes, or until cheeses are melted and bubbly. Garnish with fresh parsley if desired before serving.
