Skillet Lasagna
Enjoy all the comforting flavors of classic lasagna in a fraction of the time with this easy one-pan skillet version.
Ingredients
- 1 lb ground beef
- 1 medium onion
- 3 cloves garlic
- 28 oz crushed tomatoes
- 2 tbsp tomato paste
- 1½ cup beef broth
- 6 sheets lasagna noodles
- 15 oz ricotta cheese
- 1½ cup mozzarella cheese
- ½ cup Parmesan cheese
- 2 tbsp fresh parsley (optional)
- 1 tbsp olive oil
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Brown ground beef in a large skillet over medium-high heat, breaking it apart, then drain excess fat and set aside.
- Add olive oil to the same skillet, then sauté chopped onion until softened, about 5 minutes. Stir in minced garlic and oregano, cooking for 1 minute more.
- Return beef to the skillet. Stir in crushed tomatoes, tomato paste, beef broth, salt, and pepper. Bring to a simmer.
- Break lasagna noodles into 2-3 inch pieces and stir them into the sauce. Ensure noodles are mostly submerged. Cover and simmer for 15-20 minutes, or until noodles are tender, stirring occasionally to prevent sticking.
- While noodles cook, combine ricotta cheese, half of the Parmesan, and half of the mozzarella in a small bowl.
- Uncover the skillet. Drop spoonfuls of the ricotta mixture over the noodles, then sprinkle with the remaining mozzarella and Parmesan cheese.
- Cover again and cook for 5-7 minutes, or until cheeses are melted and bubbly. Garnish with fresh parsley if desired before serving.
