Piri-Piri Chicken with Slaw

Ingredients

  • 1½ lb chicken
  • 3 red chili
  • 2 clove garlic
  • 1 tsp ginger
  • 1 tsp dried oregano
  • 1 tsp cilantro
  • 1 tsp paprika
  • 2 tbsp red wine vinegar
  • 2 tbsp oil
  • ½ red onion
  • 2 carrots
  • 1 beet
  • ½ head cabbage
  • 2 tbsp mayonnaise
  • 2 tbsp Greek yogurt
  • 1 tsp cumin seeds
  • 1 tsp salt
  • ½ tsp black pepper

Steps

  1. Combine chilies, garlic, ginger, oregano, cilantro, paprika, 2 tbsp red wine vinegar, and oil in a food processor; blend into a marinade.
  2. Rub the marinade all over the chicken. Let it marinate at room temperature for 1 hour.
  3. Preheat oven to 190C (375F). Place the chicken in a roasting tray and roast for 1 hour 20 minutes, or until cooked through.
  4. While the chicken rests, prepare the slaw: finely slice red onion, shred carrots, beet, and cabbage.
  5. In a bowl, combine mayonnaise, Greek yogurt, 2 tbsp red wine vinegar, and cumin seeds. Add the shredded vegetables and toss to coat.
  6. Season the slaw with salt and pepper to taste. Rest the cooked chicken under loose foil for 20 minutes.
  7. Serve the piri-piri chicken hot with the prepared slaw.
