Piri-Piri Chicken with Slaw

Ingredients
- 1½ lb chicken
- 3 red chili
- 2 clove garlic
- 1 tsp ginger
- 1 tsp dried oregano
- 1 tsp cilantro
- 1 tsp paprika
- 2 tbsp red wine vinegar
- 2 tbsp oil
- ½ red onion
- 2 carrots
- 1 beet
- ½ head cabbage
- 2 tbsp mayonnaise
- 2 tbsp Greek yogurt
- 1 tsp cumin seeds
- 1 tsp salt
- ½ tsp black pepper
Steps
- Combine chilies, garlic, ginger, oregano, cilantro, paprika, 2 tbsp red wine vinegar, and oil in a food processor; blend into a marinade.
- Rub the marinade all over the chicken. Let it marinate at room temperature for 1 hour.
- Preheat oven to 190C (375F). Place the chicken in a roasting tray and roast for 1 hour 20 minutes, or until cooked through.
- While the chicken rests, prepare the slaw: finely slice red onion, shred carrots, beet, and cabbage.
- In a bowl, combine mayonnaise, Greek yogurt, 2 tbsp red wine vinegar, and cumin seeds. Add the shredded vegetables and toss to coat.
- Season the slaw with salt and pepper to taste. Rest the cooked chicken under loose foil for 20 minutes.
- Serve the piri-piri chicken hot with the prepared slaw.
