Portuguese Prego with Green Piri-Piri
Savor a quick and flavorful Portuguese steak sandwich featuring tender beef, a vibrant green piri-piri sauce, and fresh arugula on toasted ciabatta.
Ingredients
- 2 clove garlic
- 1½ lb beef fillet
- ¼ cup olive oil
- 2 tbsp sherry vinegar
- ½ bunch parsley
- 4 ciabatta rolls
- 4 cup arugula (arugula)
- ½ bunch basil leaves
- 1 jalapeno
- 2 green onions
- ½ tsp granulated sugar
- 1 tbsp water
Steps
- Rub garlic over beef fillets, then place in a bag with olive oil, sherry vinegar, and parsley stalks. Bash with a rolling pin and marinate for 1-2 hours.
- Prepare the green piri-piri sauce by blending basil, parsley, jalapeno, green onions, garlic, vinegar, sugar, and 1 tbsp water until smooth.
- Heat a griddle or frying pan to high. Remove garlic and parsley stalks from steaks, season well, and sear for 2 minutes per side. Rest steaks on a plate.
- Halve ciabatta rolls and place cut-side down on the plate to soak up steak juices.
- Slice the rested steaks and stuff into the ciabatta rolls with arugula and a generous drizzle of the green piri-piri sauce. Serve immediately.
