Portuguese Prego with Green Piri-Piri

Ingredients

  • 2 clove garlic
  • 1½ lb beef fillet
  • ¼ cup olive oil
  • 2 tbsp sherry vinegar
  • ½ bunch parsley
  • 4 ciabatta rolls
  • 4 cup arugula (arugula)
  • ½ bunch basil leaves
  • 1 jalapeno
  • 2 green onions
  • ½ tsp granulated sugar
  • 1 tbsp water

Steps

  1. Rub garlic over beef fillets, then place in a bag with olive oil, sherry vinegar, and parsley stalks. Bash with a rolling pin and marinate for 1-2 hours.
  2. Prepare the green piri-piri sauce by blending basil, parsley, jalapeno, green onions, garlic, vinegar, sugar, and 1 tbsp water until smooth.
  3. Heat a griddle or frying pan to high. Remove garlic and parsley stalks from steaks, season well, and sear for 2 minutes per side. Rest steaks on a plate.
  4. Halve ciabatta rolls and place cut-side down on the plate to soak up steak juices.
  5. Slice the rested steaks and stuff into the ciabatta rolls with arugula and a generous drizzle of the green piri-piri sauce. Serve immediately.
