Pizza Express Margherita

Ingredients

  • 150 ml water
  • 1 tsp sugar
  • 15 g fresh yeast
  • 225 g all-purpose flour
  • 1½ tsp salt
  • 2 tbsp olive oil
  • 80 g tomato sauce
  • 70 g mozzarella
  • ½ tsp dried oregano
  • 8 fresh basil leaves (optional)
  • ¼ tsp black pepper

Steps

  1. Preheat oven to 230°C (450°F). In a small bowl, combine warm water, sugar, and yeast; let stand 10-15 minutes until frothy.
  2. Sift flour and salt into a large bowl. Make a well, then pour in the yeast mixture and 1 tablespoon of olive oil. Mix until a dough forms.
  3. Turn dough onto a floured surface and knead for 10 minutes until smooth and elastic. Lightly oil a round baking tray.
  4. Press or roll the dough onto the prepared tray. Spread tomato sauce evenly over the dough, going to the edges.
  5. Distribute mozzarella over the tomato sauce. Season with oregano and black pepper, then drizzle with remaining olive oil.
  6. Bake for 10-12 minutes, or until the crust is golden and cheese is bubbly and slightly colored.
  7. Remove from oven, top with fresh basil leaves, and serve immediately.
