Pomegranate Salad
A vibrant and refreshing Polish-inspired salad featuring sweet pomegranate, tangy feta, and a zesty lemon-honey dressing.
Ingredients
- 60 ml olive oil
- 2 tbsp lemon juice
- 1 tbsp honey
- 2 tsp fresh thyme leaves
- 100 g baby lettuce leaves
- 250 g cherry tomatoes
- 3 green onions
- 1 red chili
- 1 pomegranate
- 50 g feta cheese
Steps
- Whisk together olive oil, lemon juice, honey, and thyme leaves in a large bowl. Season with salt and pepper.
- Add lettuce, cherry tomatoes, chopped green onions, and chopped red chili to the dressing. Toss gently to combine.
