Pork & Sauerkraut Goulash

A hearty and flavorful Polish goulash featuring tender pork shoulder, tangy sauerkraut, and a creamy paprika-spiced sauce.

Ingredients

  • 1½ tbsp lard
  • 2 onion
  • ½ tbsp cumin seeds
  • 400 g pork shoulder
  • 2 clove garlic
  • 1 tbsp all-purpose flour
  • 1 tbsp paprika
  • 750 ml beef broth
  • 2 bay leaves
  • 200 g white sauerkraut
  • 1 drizzle sauerkraut pickling juices
  • 100 ml whipping cream
  • 2 tbsp sour cream (optional)
  • 1 pinch salt
  • 1 pinch black pepper

Steps

  1. Heat lard in a large saucepan over medium heat. Fry chopped onion for 5-8 minutes until golden.
  2. Add cumin seeds and pork to the saucepan. Fry for 10 minutes, browning the pork on all sides.
  3. Stir in crushed garlic, season with salt and pepper, then scatter flour over the mixture. Cook for 1 minute.
  4. Add paprika and cook for 1 minute more. Pour in half of the beef broth and add bay leaves.
  5. Bring to a simmer, cover, and cook over low heat for 30 minutes.
  6. Stir in sauerkraut, remaining beef broth, and a drizzle of sauerkraut pickling juices. Cover and simmer for another 30 minutes, stirring occasionally, until the pork is tender.
  7. Stir in the whipping cream and simmer for 5 minutes to combine flavors.
  8. Season to taste and serve hot, garnished with a spoonful of sour cream if desired.
