Pork & Sauerkraut Goulash
A hearty and flavorful Polish goulash featuring tender pork shoulder, tangy sauerkraut, and a creamy paprika-spiced sauce.
Ingredients
- 1½ tbsp lard
- 2 onion
- ½ tbsp cumin seeds
- 400 g pork shoulder
- 2 clove garlic
- 1 tbsp all-purpose flour
- 1 tbsp paprika
- 750 ml beef broth
- 2 bay leaves
- 200 g white sauerkraut
- 1 drizzle sauerkraut pickling juices
- 100 ml whipping cream
- 2 tbsp sour cream (optional)
- 1 pinch salt
- 1 pinch black pepper
Steps
- Heat lard in a large saucepan over medium heat. Fry chopped onion for 5-8 minutes until golden.
- Add cumin seeds and pork to the saucepan. Fry for 10 minutes, browning the pork on all sides.
- Stir in crushed garlic, season with salt and pepper, then scatter flour over the mixture. Cook for 1 minute.
- Add paprika and cook for 1 minute more. Pour in half of the beef broth and add bay leaves.
- Bring to a simmer, cover, and cook over low heat for 30 minutes.
- Stir in sauerkraut, remaining beef broth, and a drizzle of sauerkraut pickling juices. Cover and simmer for another 30 minutes, stirring occasionally, until the pork is tender.
- Stir in the whipping cream and simmer for 5 minutes to combine flavors.
- Season to taste and serve hot, garnished with a spoonful of sour cream if desired.
