Pork Adobo
A classic Filipino stew featuring tender pork belly braised in a savory and tangy sauce of soy sauce, vinegar, garlic, and peppercorns.
Ingredients
- 1½ lb pork belly
- ½ cup soy sauce
- ½ cup white vinegar
- 6 clove garlic
- 1 tsp black peppercorns
- 3 bay leaves
- ½ cup water
- 1 tbsp cooking oil
- 3 cup steamed rice (optional)
Steps
- Cut pork belly into 1.5-inch cubes. Mince garlic.
- In a large pot or Dutch oven, combine pork belly, soy sauce, vinegar, minced garlic, black peppercorns, bay leaves, and water. Bring to a boil.
- Reduce heat to low, cover, and simmer for 45-60 minutes, or until the pork is tender.
- Remove the lid and increase heat to medium. Continue to simmer, stirring occasionally, until the sauce reduces and thickens slightly, about 10-15 minutes.
- If desired, you can brown the pork: remove pork from the sauce, heat 1 tablespoon of cooking oil in a separate pan, and sear the pork pieces until lightly browned. Return pork to the sauce.
- Serve hot with steamed rice.
