Pork Loin with Italian Herbs

Ingredients

  • 1½ lb Pork loin roast
  • 2 tbsp Olive oil
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • ½ tsp Dried rosemary
  • ½ tsp Garlic powder
  • 1 tsp Salt
  • ½ tsp Black pepper
  • 2 tbsp Fresh parsley (optional)

Steps

  1. Preheat oven to 375°F (190°C).
  2. Pat the pork loin dry with paper towels. In a small bowl, combine olive oil, oregano, basil, rosemary, garlic powder, salt, and black pepper.
  3. Rub the herb mixture evenly over all sides of the pork loin.
  4. Place the seasoned pork loin in a roasting pan or on a baking sheet.
  5. Roast for 45-60 minutes, or until the internal temperature reaches 145°F (63°C) with a meat thermometer.
  6. Remove from oven, tent loosely with foil, and let rest for 10 minutes before slicing.
  7. Garnish with fresh parsley, if desired, and serve.
