Potato Gratin with Chicken and Bacon
A comforting Italian-inspired gratin featuring tender potatoes, caramelized onions, creamy sauce, and a golden Parmesan crust, served alongside juicy chicken and crispy bacon with fresh greens.
Ingredients
- 800 g potatoes
- 3 onions
- 2 tbsp olive oil
- 100 ml chicken broth
- 1 cup creme fraiche
- ½ cup Parmesan cheese
- 4 chicken breasts
- 4 strips bacon
- 4 oz spinach (optional)
- 1 cup peas (optional)
- 1 tsp salt
- ½ tsp black pepper
Steps
- Preheat oven to 375°F (190°C). Thinly slice potatoes and boil in salted water for 5-8 minutes until firm-tender; drain well.
- Thinly slice onions and place in an oven-safe dish with olive oil and chicken broth. Cook in the oven for 10-15 minutes until softened.
- Drain potatoes and layer over the softened onions in the dish. Season with salt and pepper.
- Spoon creme fraiche over the potatoes and onions, ensuring an even layer.
- Grate Parmesan cheese generously over the top of the gratin.
- Bake for 20-25 minutes, then finish under the broiler for 3-5 minutes until golden brown and bubbly.
- While the gratin bakes, cook chicken breasts and bacon until done. Steam or sauté spinach and peas.
- Serve the potato gratin hot with the cooked chicken, crispy bacon, and greens.
