Ingredients

  • 800 g potatoes
  • 3 onions
  • 2 tbsp olive oil
  • 100 ml chicken broth
  • 1 cup creme fraiche
  • ½ cup Parmesan cheese
  • 4 chicken breasts
  • 4 strips bacon
  • 4 oz spinach (optional)
  • 1 cup peas (optional)
  • 1 tsp salt
  • ½ tsp black pepper

Steps

  1. Preheat oven to 375°F (190°C). Thinly slice potatoes and boil in salted water for 5-8 minutes until firm-tender; drain well.
  2. Thinly slice onions and place in an oven-safe dish with olive oil and chicken broth. Cook in the oven for 10-15 minutes until softened.
  3. Drain potatoes and layer over the softened onions in the dish. Season with salt and pepper.
  4. Spoon creme fraiche over the potatoes and onions, ensuring an even layer.
  5. Grate Parmesan cheese generously over the top of the gratin.
  6. Bake for 20-25 minutes, then finish under the broiler for 3-5 minutes until golden brown and bubbly.
  7. While the gratin bakes, cook chicken breasts and bacon until done. Steam or sauté spinach and peas.
  8. Serve the potato gratin hot with the cooked chicken, crispy bacon, and greens.
