Red Curry Beef
A rich and aromatic Thai-inspired red curry with tender beef, creamy coconut milk, and crisp vegetables, perfect for a satisfying meal.
Ingredients
- 1½ lb beef sirloin
- 4 tbsp red curry paste
- 27 oz coconut milk
- 1 bell pepper
- 8 oz bamboo shoots
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 1 lime
- ¼ cup fresh basil leaves (optional)
- 2 cup jasmine rice
- 1 tbsp vegetable oil
Steps
- Cook jasmine rice according to package directions.
- Cut beef sirloin into thin strips. Slice bell pepper into thin strips. Drain and rinse bamboo shoots.
- Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add beef and sear until browned, about 3-4 minutes. Remove beef and set aside.
- Reduce heat to medium, add red curry paste to the pot, and cook for 1 minute until fragrant.
- Pour in coconut milk, stir well, and bring to a simmer. Add fish sauce and brown sugar, stirring until sugar dissolves.
- Return beef to the pot, add bell pepper and bamboo shoots. Simmer for 10-15 minutes, or until beef is tender and vegetables are crisp-tender.
- Squeeze in the juice of one lime and stir. Taste and adjust seasoning if needed.
- Serve hot over jasmine rice, garnished with fresh basil leaves if desired.
