Ingredients

  • 1½ lb large shrimp, peeled and deveined
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • ½ red onion
  • 1 lime
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil
  • 8 flour tortillas
  • ¼ cup fresh cilantro, chopped (optional)
  • ½ cup sour cream (optional)
  • 1 avocado, sliced (optional)

Steps

  1. Slice bell peppers and red onion into thin strips.
  2. In a large bowl, toss shrimp with garlic powder, onion powder, chili powder, cumin, smoked paprika, salt, and black pepper.
  3. Heat olive oil in a large skillet or cast-iron pan over medium-high heat. Add bell peppers and onion and cook for 5-7 minutes until tender-crisp.
  4. Add the seasoned shrimp to the skillet with the vegetables. Cook for 3-5 minutes, stirring occasionally, until the shrimp are pink and cooked through.
  5. Squeeze fresh lime juice over the shrimp and vegetables. Stir to combine.
  6. Warm the tortillas according to package directions. Serve the shrimp fajitas immediately with warm tortillas and optional toppings like cilantro, sour cream, or avocado.
