Shrimp Scampi with Linguine
A classic Italian-American dish featuring succulent shrimp tossed in a garlicky, buttery, and lemony sauce, served over al dente linguine.
Ingredients
- 12 oz linguine
- 1½ lb large shrimp, peeled and deveined
- ½ cup unsalted butter
- 4 clove garlic, minced
- ½ cup dry white wine (like Pinot Grigio) (optional)
- ¼ cup fresh lemon juice
- ½ tsp red pepper flakes (optional)
- ¼ cup fresh parsley, chopped
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
Steps
- Cook linguine according to package directions in salted water until al dente. Reserve 1 cup of pasta water before draining.
- While pasta cooks, pat shrimp dry and season with salt and pepper.
- In a large skillet, melt butter with olive oil over medium heat. Add minced garlic and red pepper flakes (if using), and cook for 1 minute until fragrant.
- Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from the skillet and set aside.
- Deglaze the skillet with white wine (if using) and lemon juice, scraping up any browned bits. Bring to a simmer and cook for 2 minutes.
- Return shrimp to the skillet. Add the drained linguine and chopped parsley. Toss to combine, adding reserved pasta water as needed to create a light sauce.
- Serve immediately, garnished with extra fresh parsley if desired.
