Shrimp Scampi with Linguine

Ingredients

  • 12 oz linguine
  • 1½ lb large shrimp, peeled and deveined
  • ½ cup unsalted butter
  • 4 clove garlic, minced
  • ½ cup dry white wine (like Pinot Grigio) (optional)
  • ¼ cup fresh lemon juice
  • ½ tsp red pepper flakes (optional)
  • ¼ cup fresh parsley, chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil

Steps

  1. Cook linguine according to package directions in salted water until al dente. Reserve 1 cup of pasta water before draining.
  2. While pasta cooks, pat shrimp dry and season with salt and pepper.
  3. In a large skillet, melt butter with olive oil over medium heat. Add minced garlic and red pepper flakes (if using), and cook for 1 minute until fragrant.
  4. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from the skillet and set aside.
  5. Deglaze the skillet with white wine (if using) and lemon juice, scraping up any browned bits. Bring to a simmer and cook for 2 minutes.
  6. Return shrimp to the skillet. Add the drained linguine and chopped parsley. Toss to combine, adding reserved pasta water as needed to create a light sauce.
  7. Serve immediately, garnished with extra fresh parsley if desired.
