Spiced Smoky Barbecued Chicken

Ingredients

  • 4 chicken thighs, bone-in, skin-on
  • 2 clove garlic
  • 1 lemon
  • 2 tbsp curry powder
  • ¼ tsp chili flakes
  • 3 tbsp olive oil
  • 2 bunch fresh rosemary
  • 2 bunch fresh thyme
  • 2 bay leaves
  • ½ tsp salt
  • ½ tsp black pepper

Steps

  1. Mince garlic and smash with a pinch of salt. Zest and juice the lemon.
  2. Combine garlic, lemon zest, lemon juice, curry powder, chili flakes, olive oil, and black pepper to form a marinade.
  3. Toss chicken thighs in the marinade, ensuring they are well coated. Set aside while preparing the grill.
  4. Preheat your barbecue to medium-high heat. Once hot, lay the bunches of rosemary, thyme, and bay leaves directly on the grill grates.
  5. Place chicken thighs, skin-side up, on top of the herbs. Close the lid if your grill has one, and cook for about 10 minutes until lightly colored.
  6. Turn the chicken and continue to cook for 20-30 minutes, turning occasionally, until the chicken is cooked through and slightly charred from the herbs.
