Spiced Smoky Barbecued Chicken

Ingredients
- 4 chicken thighs, bone-in, skin-on
- 2 clove garlic
- 1 lemon
- 2 tbsp curry powder
- ¼ tsp chili flakes
- 3 tbsp olive oil
- 2 bunch fresh rosemary
- 2 bunch fresh thyme
- 2 bay leaves
- ½ tsp salt
- ½ tsp black pepper
Steps
- Mince garlic and smash with a pinch of salt. Zest and juice the lemon.
- Combine garlic, lemon zest, lemon juice, curry powder, chili flakes, olive oil, and black pepper to form a marinade.
- Toss chicken thighs in the marinade, ensuring they are well coated. Set aside while preparing the grill.
- Preheat your barbecue to medium-high heat. Once hot, lay the bunches of rosemary, thyme, and bay leaves directly on the grill grates.
- Place chicken thighs, skin-side up, on top of the herbs. Close the lid if your grill has one, and cook for about 10 minutes until lightly colored.
- Turn the chicken and continue to cook for 20-30 minutes, turning occasionally, until the chicken is cooked through and slightly charred from the herbs.
