Spicy Thai Shrimp Noodles
A vibrant and quick Thai noodle dish featuring succulent shrimp, fresh herbs, and a zesty lime kick, all tossed with thin omelette strips.
Ingredients
- 400 g rice noodles
- 2 tbsp sesame oil
- 4 eggs
- 2 red chili
- 6 cm piece ginger
- 900 g shrimp
- 2 tbsp soy sauce
- 1 bunch fresh cilantro
- 1 handful fresh mint
- 2 lime
- 2 handful peanuts (optional)
Steps
- Cook rice noodles according to package instructions, then drain and set aside.
- Heat 1 tablespoon sesame oil in a large frying pan over medium heat. Whisk eggs and pour into the pan to make a thin omelette. Cook for 1-2 minutes per side, then remove, slice into thin strips, and set aside.
- Add remaining sesame oil to the pan. Add chopped red chili and grated ginger, frying for 1-2 minutes until fragrant.
- Add the cooked noodles and shrimp to the pan. Stir-fry for 2-3 minutes until shrimp are cooked through.
- Stir in the soy sauce and sliced omelette strips.
- Remove from heat and toss with chopped cilantro, mint, and the zest and juice of the lime.
- Serve immediately, garnished with chopped peanuts if desired.
