Spicy Thai Shrimp Noodles

A vibrant and quick Thai noodle dish featuring succulent shrimp, fresh herbs, and a zesty lime kick, all tossed with thin omelette strips.

Ingredients

  • 400 g rice noodles
  • 2 tbsp sesame oil
  • 4 eggs
  • 2 red chili
  • 6 cm piece ginger
  • 900 g shrimp
  • 2 tbsp soy sauce
  • 1 bunch fresh cilantro
  • 1 handful fresh mint
  • 2 lime
  • 2 handful peanuts (optional)

Steps

  1. Cook rice noodles according to package instructions, then drain and set aside.
  2. Heat 1 tablespoon sesame oil in a large frying pan over medium heat. Whisk eggs and pour into the pan to make a thin omelette. Cook for 1-2 minutes per side, then remove, slice into thin strips, and set aside.
  3. Add remaining sesame oil to the pan. Add chopped red chili and grated ginger, frying for 1-2 minutes until fragrant.
  4. Add the cooked noodles and shrimp to the pan. Stir-fry for 2-3 minutes until shrimp are cooked through.
  5. Stir in the soy sauce and sliced omelette strips.
  6. Remove from heat and toss with chopped cilantro, mint, and the zest and juice of the lime.
  7. Serve immediately, garnished with chopped peanuts if desired.
