Stir-fried Chicken with Chilies & Basil
A fiery and fragrant Thai stir-fry featuring tender chicken, aromatic basil, and a savory sauce, perfect for a quick weeknight meal.
Ingredients
- 2 tbsp vegetable oil
- 1 lb chicken breast
- 3 tbsp garlic
- 3 tbsp shallots
- 3 red chilies
- 2 tbsp fish sauce
- 2 tsp soy sauce
- 2 tsp sugar
- ½ cup fresh basil leaves
Steps
- Heat 1 tablespoon of oil in a wok or large frying pan over high heat until very hot.
- Add the chicken and stir-fry for 8-10 minutes until browned. Remove chicken and set aside.
- Reheat the wok with the remaining 1 tablespoon of oil. Add garlic and shallots, stir-fry for 3 minutes until golden.
- Return the chicken to the wok. Add chilies, fish sauce, soy sauce, and sugar.
- Stir-fry for another 8-10 minutes, or until the chicken is cooked through.
- Stir in the fresh basil leaves and serve immediately.
