Stir-fried Chicken with Chilies & Basil

Ingredients

  • 2 tbsp vegetable oil
  • 1 lb chicken breast
  • 3 tbsp garlic
  • 3 tbsp shallots
  • 3 red chilies
  • 2 tbsp fish sauce
  • 2 tsp soy sauce
  • 2 tsp sugar
  • ½ cup fresh basil leaves

Steps

  1. Heat 1 tablespoon of oil in a wok or large frying pan over high heat until very hot.
  2. Add the chicken and stir-fry for 8-10 minutes until browned. Remove chicken and set aside.
  3. Reheat the wok with the remaining 1 tablespoon of oil. Add garlic and shallots, stir-fry for 3 minutes until golden.
  4. Return the chicken to the wok. Add chilies, fish sauce, soy sauce, and sugar.
  5. Stir-fry for another 8-10 minutes, or until the chicken is cooked through.
  6. Stir in the fresh basil leaves and serve immediately.
