Ingredients

  • 1 cup rice
  • 2 cup chicken broth
  • 1 cup tomato sauce
  • ¼ cup olive oil
  • ¼ tsp ground allspice
  • ½ tsp cinnamon
  • 1 onion
  • ½ cup raisins
  • ½ cup dill
  • ½ cup pine nuts
  • 2 tbsp lemon juice
  • ½ tsp salt
  • ¼ tsp black pepper
  • 16 grape leaves (optional)

Steps

  1. Rinse rice under cold water until the water runs clear; drain well.
  2. Heat olive oil in a medium pot over medium heat. Add chopped onion and sauté until tender, about 5-7 minutes.
  3. Stir in allspice and cinnamon; cook for 1 minute until fragrant.
  4. Add the rinsed rice, chicken broth, tomato sauce, raisins, dill, pine nuts, lemon juice, salt, and pepper to the pot. Stir to combine.
  5. Bring the mixture to a gentle boil, then reduce heat to low, cover, and simmer for 30 minutes, or until all liquid is absorbed and rice is tender.
  6. Fluff the rice with a fork. If using as a stuffing, let cool slightly before filling grape leaves. Serve warm.
