Stuffed Grape Leaves
Fragrant rice, pine nuts, and raisins are seasoned with warm spices and simmered to perfection, ready to be wrapped in tender grape leaves for a delightful Mediterranean side.
Ingredients
- 1 cup rice
- 2 cup chicken broth
- 1 cup tomato sauce
- ¼ cup olive oil
- ¼ tsp ground allspice
- ½ tsp cinnamon
- 1 onion
- ½ cup raisins
- ½ cup dill
- ½ cup pine nuts
- 2 tbsp lemon juice
- ½ tsp salt
- ¼ tsp black pepper
- 16 grape leaves (optional)
Steps
- Rinse rice under cold water until the water runs clear; drain well.
- Heat olive oil in a medium pot over medium heat. Add chopped onion and sauté until tender, about 5-7 minutes.
- Stir in allspice and cinnamon; cook for 1 minute until fragrant.
- Add the rinsed rice, chicken broth, tomato sauce, raisins, dill, pine nuts, lemon juice, salt, and pepper to the pot. Stir to combine.
- Bring the mixture to a gentle boil, then reduce heat to low, cover, and simmer for 30 minutes, or until all liquid is absorbed and rice is tender.
- Fluff the rice with a fork. If using as a stuffing, let cool slightly before filling grape leaves. Serve warm.
