Ingredients

  • 1 medium cucumber
  • 2 medium roma tomatoes
  • ½ medium red onion
  • 1 medium bell pepper
  • ½ cup kalamata olives
  • 4 oz feta cheese
  • 15 oz canned chickpeas
  • 3 tbsp red wine vinegar
  • 4 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Dice the cucumber, tomatoes, and bell pepper into bite-sized pieces. Thinly slice the red onion.
  2. Drain and rinse the canned chickpeas.
  3. In a large bowl, combine the diced vegetables, sliced red onion, kalamata olives, and chickpeas.
  4. Crumble the feta cheese over the vegetables.
  5. In a small bowl, whisk together the red wine vinegar, olive oil, dried oregano, salt, and pepper to make the dressing.
  6. Pour the dressing over the salad ingredients and toss gently to combine.
  7. Serve immediately or chill for a short period to allow flavors to meld.
