Udon Noodle Soup
A comforting and hearty Japanese noodle soup featuring thick udon noodles in a savory broth with vegetables and your choice of protein.
Ingredients
- 14 oz Udon noodles (dried or fresh)
- 6 cup Vegetable broth
- 4 tbsp Soy sauce
- 2 tbsp Mirin
- 1 tsp Sugar
- 4 Green onions
- 8 oz Bok choy
- 1 Carrot
- 4 oz Shiitake mushrooms
- 1 tsp Sesame oil (optional)
- 8 oz Tofu (firm or extra-firm) (optional)
- 2 Nori (seaweed sheets) (optional)
Steps
- Prepare the vegetables: Slice green onions, chop bok choy, julienne the carrot, and slice shiitake mushrooms.
- In a large pot, combine vegetable broth, soy sauce, mirin, and sugar. Bring to a simmer over medium heat.
- Add the carrots and shiitake mushrooms to the simmering broth and cook for 5 minutes. If using tofu, add it now.
- Add the udon noodles and bok choy to the pot and cook according to package directions, usually 3-5 minutes, until noodles are tender and bok choy is wilted.
- Divide the soup into bowls, garnish with sliced green onions, and a drizzle of sesame oil and nori if desired. Serve hot.
