Thai Fried Rice with Shrimp & Peas
A quick and flavorful Thai fried rice featuring succulent shrimp, sweet peas, and a perfectly fried egg on top.
Ingredients
- 2 tbsp vegetable oil
- 1 red onion
- 2 clove garlic
- 1 red chili
- 0.55 lb raw large shrimp
- ¾ lb cooked brown rice
- ½ cup frozen peas
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- ¼ cup fresh cilantro
- 4 large eggs
- 1 tbsp hot sauce (optional)
Steps
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the sliced red onion, minced garlic, and sliced red chili, then cook for 2-3 minutes until fragrant and lightly golden.
- Add the shrimp to the wok and cook for 1 minute until they start to turn pink.
- Stir in the cooked brown rice and frozen peas. Toss continuously for 3-5 minutes until the rice and peas are heated through and slightly toasted.
- Pour in the soy sauce and fish sauce, mixing well to coat all ingredients. Stir in half of the chopped fresh cilantro. Transfer the fried rice to a serving platter and keep warm.
- Heat the remaining 1 tablespoon of oil in a separate frying pan over medium heat. Fry the eggs to your desired doneness, seasoning with salt and pepper.
- Divide the fried rice among 4 bowls. Top each serving with a fried egg and garnish with the remaining fresh cilantro.
- Serve immediately with hot sauce on the side, if desired.
