Thai Fried Rice with Shrimp & Peas

A quick and flavorful Thai fried rice featuring succulent shrimp, sweet peas, and a perfectly fried egg on top.

Ingredients

  • 2 tbsp vegetable oil
  • 1 red onion
  • 2 clove garlic
  • 1 red chili
  • 0.55 lb raw large shrimp
  • ¾ lb cooked brown rice
  • ½ cup frozen peas
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • ¼ cup fresh cilantro
  • 4 large eggs
  • 1 tbsp hot sauce (optional)

Steps

  1. Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the sliced red onion, minced garlic, and sliced red chili, then cook for 2-3 minutes until fragrant and lightly golden.
  2. Add the shrimp to the wok and cook for 1 minute until they start to turn pink.
  3. Stir in the cooked brown rice and frozen peas. Toss continuously for 3-5 minutes until the rice and peas are heated through and slightly toasted.
  4. Pour in the soy sauce and fish sauce, mixing well to coat all ingredients. Stir in half of the chopped fresh cilantro. Transfer the fried rice to a serving platter and keep warm.
  5. Heat the remaining 1 tablespoon of oil in a separate frying pan over medium heat. Fry the eggs to your desired doneness, seasoning with salt and pepper.
  6. Divide the fried rice among 4 bowls. Top each serving with a fried egg and garnish with the remaining fresh cilantro.
  7. Serve immediately with hot sauce on the side, if desired.
