Thai Green Chicken Soup

Ingredients

  • 2 tbsp sunflower oil
  • 1 onion
  • 1⅛ lb chicken thighs
  • 4 clove garlic
  • 10 oz Thai green curry paste
  • 13½ fl oz coconut milk
  • 2 qt chicken broth
  • 5 lime leaves
  • 2 tbsp fish sauce
  • 1 bunch green onions
  • 10 oz green beans
  • 5 oz bamboo shoots
  • 2 lime
  • ½ bunch basil

Steps

  1. Heat oil in a large pot, add chopped onion and cook for 3 minutes until softened. Add chicken and garlic, cooking until chicken changes color.
  2. Stir in the curry paste, coconut milk, chicken broth, lime leaves, and fish sauce. Bring to a simmer and cook for 12 minutes.
  3. Add green beans and bamboo shoots to the soup and cook for 4-6 minutes, until the beans are tender-crisp.
  4. Meanwhile, blend lime juice and basil into a smooth paste. Stir the lime-basil paste and sliced green onions into the soup and heat through.
  5. Serve hot, optionally with extra lime wedges.
