Thai Green Chicken Soup
A fragrant and vibrant Thai green curry soup featuring tender chicken, crisp vegetables, and a zesty lime-basil finish.
Ingredients
- 2 tbsp sunflower oil
- 1 onion
- 1⅛ lb chicken thighs
- 4 clove garlic
- 10 oz Thai green curry paste
- 13½ fl oz coconut milk
- 2 qt chicken broth
- 5 lime leaves
- 2 tbsp fish sauce
- 1 bunch green onions
- 10 oz green beans
- 5 oz bamboo shoots
- 2 lime
- ½ bunch basil
Steps
- Heat oil in a large pot, add chopped onion and cook for 3 minutes until softened. Add chicken and garlic, cooking until chicken changes color.
- Stir in the curry paste, coconut milk, chicken broth, lime leaves, and fish sauce. Bring to a simmer and cook for 12 minutes.
- Add green beans and bamboo shoots to the soup and cook for 4-6 minutes, until the beans are tender-crisp.
- Meanwhile, blend lime juice and basil into a smooth paste. Stir the lime-basil paste and sliced green onions into the soup and heat through.
- Serve hot, optionally with extra lime wedges.
