Thai Pork & Peanut Curry
A rich and flavorful Thai curry featuring tender pork, creamy peanut butter, and a hint of lime, perfect over jasmine rice.
Ingredients
- 1 tbsp vegetable oil
- 1 bunch green onions
- 1 bunch cilantro
- 0.9 lb pork tenderloin
- 4 tbsp Thai red curry paste
- 4 tbsp peanut butter
- 1 tbsp brown sugar
- 1 tbsp soy sauce
- 13½ fl oz coconut milk
- 6¾ fl oz water
- 6.2 oz sweetcorn
- 1 lime
- 2 cup jasmine rice
Steps
- Heat oil in a large saucepan or flameproof casserole. Add sliced green onions and cilantro stalks; cook for 1 minute.
- Add pork slices and cook for 5 minutes until starting to brown.
- Stir in curry paste and peanut butter. After 30 seconds, add brown sugar, soy sauce, coconut milk, and water. Mix well.
- Cover and simmer for 15 minutes, stirring occasionally.
- Remove lid, add sweetcorn, and increase heat. Bubble for 3 minutes until corn is cooked and sauce thickens slightly.
- Stir in lime juice and adjust seasoning as needed.
- Serve immediately over steamed jasmine rice, garnished with fresh cilantro leaves.
