Tom Yum Goong (Hot & Sour Shrimp Soup)

Ingredients

  • 700 ml chicken broth
  • 1 stalk lemongrass
  • 5 slice galangal
  • 6 cilantro roots
  • 3 makrut lime leaves
  • 6 large shrimp
  • 3 tbsp fish sauce
  • 6 green chilies
  • 4 tbsp lime juice
  • ¼ cup fresh cilantro leaves (optional)

Steps

  1. Bring the chicken broth to a boil in a medium saucepan.
  2. Add the lemongrass, galangal, cilantro roots, and makrut lime leaves to the boiling stock and simmer for 2 minutes.
  3. Add the shrimp, fish sauce, and green chilies, then return the soup to a boil.
  4. Stir in the lime juice.
  5. Taste and adjust seasoning with more lime juice or fish sauce if needed.
  6. Garnish with fresh cilantro leaves and serve immediately.
