Tuna Nicoise Salad
A classic French salad featuring flaky tuna, roasted potatoes, hard-boiled eggs, and fresh greens, all tossed in a zesty vinaigrette.
Ingredients
- 450 g potatoes
- 2 tbsp olive oil
- 4 eggs
- 1 tbsp red wine vinegar
- 2 tbsp capers
- 50 g sunflower oil
- ½ red onion
- 100 g spinach
- 400 g tuna in oil
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Preheat oven to 200C (180C fan/Gas 6). Toss potatoes with 2 tsp olive oil, salt, and pepper, then roast on a baking tray for 20 minutes, stirring halfway, until crisp.
- Meanwhile, hard-boil eggs by simmering in water for 8-10 minutes. Immediately plunge into cold water to cool, then peel and halve.
- In a large salad bowl, whisk together the remaining olive oil, sunflower oil, red wine vinegar, capers, salt, and pepper to make the dressing.
- Add the chopped red onion, spinach, drained tuna, and roasted potatoes to the bowl with the dressing.
- Gently toss all ingredients to combine thoroughly.
- Arrange the halved hard-boiled eggs on top of the salad and serve immediately.
