Ingredients

  • 1¼ lb ground turkey
  • 1 tbsp olive oil
  • 1 medium yellow onion
  • 3 clove garlic
  • 1 medium red bell pepper
  • 14½ oz diced tomatoes
  • 2 tbsp tomato paste
  • ½ cup green olives
  • ¼ cup raisins
  • 1 tsp cumin
  • ½ tsp oregano
  • ¾ tsp salt
  • ¼ tsp black pepper
  • 1 lb potatoes (optional)
  • 2 cup white rice (optional)

Steps

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  2. Add chopped onion, bell pepper, and minced garlic to the skillet. Cook until vegetables soften, about 5 minutes.
  3. Stir in diced tomatoes, tomato paste, cumin, oregano, salt, and pepper. Bring to a simmer.
  4. Reduce heat to medium-low, cover, and cook for 10 minutes to allow flavors to meld.
  5. Stir in green olives and raisins. Cook for another 5 minutes, uncovered, until the sauce has slightly thickened.
  6. Serve hot, optionally over white rice or with cooked potatoes.
