Ingredients

  • 1 lb ground beef
  • 1 onion
  • 3 clove garlic
  • 2 tbsp taco seasoning
  • 14½ oz canned diced tomatoes
  • 16 oz canned refried beans
  • 4 large flour tortillas
  • 2 cup shredded cheddar cheese
  • 20 oz red enchilada sauce
  • ½ cup sour cream (optional)
  • ¼ cup fresh cilantro (optional)
  • 1 jalapeño (optional)

Steps

  1. Preheat oven to 375°F (190°C). Dice the onion and mince the garlic.
  2. Brown ground beef in a large skillet over medium-high heat. Drain excess fat. Add diced onion and cook until softened, about 5 minutes. Stir in minced garlic and taco seasoning, cooking for 1 minute more.
  3. Stir in diced tomatoes and refried beans into the beef mixture. Heat through for 2-3 minutes.
  4. Lay out tortillas. Divide the beef and bean mixture evenly among the tortillas, placing it in the center. Sprinkle a quarter of the shredded cheese over the filling in each tortilla. Fold in the sides, then roll up tightly to form burritos.
  5. Pour about half of the enchilada sauce into the bottom of a 9x13 inch baking dish. Place the rolled burritos seam-side down in the dish. Pour the remaining enchilada sauce over the burritos, ensuring they are well-covered.
  6. Sprinkle the remaining shredded cheese over the sauced burritos. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the burritos are heated through.
  7. Remove from oven and let stand for a few minutes. Garnish with sour cream, fresh cilantro, or sliced jalapeños if desired, and serve hot.
