Wet Burrito
A hearty and satisfying burrito smothered in a rich red sauce and melted cheese, perfect for a comforting meal.
Ingredients
- 1 lb ground beef
- 1 onion
- 3 clove garlic
- 2 tbsp taco seasoning
- 14½ oz canned diced tomatoes
- 16 oz canned refried beans
- 4 large flour tortillas
- 2 cup shredded cheddar cheese
- 20 oz red enchilada sauce
- ½ cup sour cream (optional)
- ¼ cup fresh cilantro (optional)
- 1 jalapeño (optional)
Steps
- Preheat oven to 375°F (190°C). Dice the onion and mince the garlic.
- Brown ground beef in a large skillet over medium-high heat. Drain excess fat. Add diced onion and cook until softened, about 5 minutes. Stir in minced garlic and taco seasoning, cooking for 1 minute more.
- Stir in diced tomatoes and refried beans into the beef mixture. Heat through for 2-3 minutes.
- Lay out tortillas. Divide the beef and bean mixture evenly among the tortillas, placing it in the center. Sprinkle a quarter of the shredded cheese over the filling in each tortilla. Fold in the sides, then roll up tightly to form burritos.
- Pour about half of the enchilada sauce into the bottom of a 9x13 inch baking dish. Place the rolled burritos seam-side down in the dish. Pour the remaining enchilada sauce over the burritos, ensuring they are well-covered.
- Sprinkle the remaining shredded cheese over the sauced burritos. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the burritos are heated through.
- Remove from oven and let stand for a few minutes. Garnish with sour cream, fresh cilantro, or sliced jalapeños if desired, and serve hot.
