Bang Bang Shrimp Salad

Ingredients
- 5.6 oz rice noodles
- 6 tbsp peanut butter
- 8 tbsp coconut milk
- 6 tbsp sweet chili sauce
- 6 green onions
- 2 cucumber
- 12 oz bean sprouts
- 8 oz shrimp
- 2 tbsp water (optional)
Steps
- Cook rice noodles according to package instructions, then rinse with cold water and drain well.
- In a small saucepan, combine peanut butter, coconut milk, sweet chili sauce, and half of the sliced green onions. Heat gently until melted and smooth, adding 1-2 tablespoons of water to achieve a drizzling consistency.
- In a large serving bowl, combine the cooked noodles, sliced cucumber, and bean sprouts.
- Top the noodle mixture with the shrimp.
- Drizzle the peanut sauce generously over the salad.
- Garnish with the remaining sliced green onions and serve immediately.
