Ingredients

  • 5.6 oz rice noodles
  • 6 tbsp peanut butter
  • 8 tbsp coconut milk
  • 6 tbsp sweet chili sauce
  • 6 green onions
  • 2 cucumber
  • 12 oz bean sprouts
  • 8 oz shrimp
  • 2 tbsp water (optional)

Steps

  1. Cook rice noodles according to package instructions, then rinse with cold water and drain well.
  2. In a small saucepan, combine peanut butter, coconut milk, sweet chili sauce, and half of the sliced green onions. Heat gently until melted and smooth, adding 1-2 tablespoons of water to achieve a drizzling consistency.
  3. In a large serving bowl, combine the cooked noodles, sliced cucumber, and bean sprouts.
  4. Top the noodle mixture with the shrimp.
  5. Drizzle the peanut sauce generously over the salad.
  6. Garnish with the remaining sliced green onions and serve immediately.
