Salmon Noodle Soup
A fragrant Vietnamese-inspired salmon noodle soup featuring tender salmon, earthy mushrooms, and a zesty lime finish.
Ingredients
- 1 L chicken broth
- 2 tsp Thai red curry paste
- 100 g rice noodles
- 150 g shiitake mushrooms
- 125 g sweetcorn
- 2 salmon fillets
- 2 lime juice
- 1 tbsp soy sauce
- ¼ tsp brown sugar
- ½ bunch cilantro (optional)
Steps
- Pour chicken broth into a large pan and bring to a boil. Stir in the red curry paste.
- Add rice noodles to the boiling stock and cook for 8 minutes.
- Stir in shiitake mushrooms and sweetcorn, then cook for an additional 2 minutes.
- Add salmon fillets to the pan and cook for 3 minutes, or until cooked through.
- Remove the pan from heat. Stir in lime juice, soy sauce, and a pinch of brown sugar.
- Ladle the soup into 4 bowls and sprinkle with fresh cilantro before serving.
