Salmon Noodle Soup

Ingredients

  • 1 L chicken broth
  • 2 tsp Thai red curry paste
  • 100 g rice noodles
  • 150 g shiitake mushrooms
  • 125 g sweetcorn
  • 2 salmon fillets
  • 2 lime juice
  • 1 tbsp soy sauce
  • ¼ tsp brown sugar
  • ½ bunch cilantro (optional)

Steps

  1. Pour chicken broth into a large pan and bring to a boil. Stir in the red curry paste.
  2. Add rice noodles to the boiling stock and cook for 8 minutes.
  3. Stir in shiitake mushrooms and sweetcorn, then cook for an additional 2 minutes.
  4. Add salmon fillets to the pan and cook for 3 minutes, or until cooked through.
  5. Remove the pan from heat. Stir in lime juice, soy sauce, and a pinch of brown sugar.
  6. Ladle the soup into 4 bowls and sprinkle with fresh cilantro before serving.
