Vietnamese Shrimp Spiralized Rolls

Ingredients

  • ½ lime
  • 2 tbsp rice vinegar
  • 1 tbsp palm sugar
  • 3 tbsp fish sauce
  • 1 bird's eye chili
  • ¼ cup water
  • 6 rice paper sheets
  • ½ bunch fresh mint
  • ½ bunch fresh cilantro
  • 12 large shrimp
  • 1 large carrot
  • 1 large zucchini

Steps

  1. Combine lime juice, rice vinegar, palm sugar, fish sauce, chopped chili, and water in a bowl for the dipping sauce; set aside to infuse.
  2. Prepare your workspace with a wide bowl of warm water and a damp tea towel.
  3. Dip one rice paper wrapper in warm water for a few seconds until soft, then place it carefully on the damp tea towel.
  4. Arrange a few mint and cilantro leaves, two shrimp, and a small handful of spiralized carrot and zucchini in the center of the wrapper.
  5. Fold the sides of the wrapper over the filling, then fold in the edges to fully encase the ingredients.
  6. Tightly roll the wrapper from the bottom up. Repeat with remaining wrappers and filling.
  7. Slice the finished rolls diagonally and serve immediately with the prepared dipping sauce.
