Vietnamese Shrimp Spiralized Rolls
Fresh and vibrant Vietnamese spring rolls filled with succulent shrimp, crisp spiralized vegetables, and aromatic herbs, served with a zesty dipping sauce.
Ingredients
- ½ lime
- 2 tbsp rice vinegar
- 1 tbsp palm sugar
- 3 tbsp fish sauce
- 1 bird's eye chili
- ¼ cup water
- 6 rice paper sheets
- ½ bunch fresh mint
- ½ bunch fresh cilantro
- 12 large shrimp
- 1 large carrot
- 1 large zucchini
Steps
- Combine lime juice, rice vinegar, palm sugar, fish sauce, chopped chili, and water in a bowl for the dipping sauce; set aside to infuse.
- Prepare your workspace with a wide bowl of warm water and a damp tea towel.
- Dip one rice paper wrapper in warm water for a few seconds until soft, then place it carefully on the damp tea towel.
- Arrange a few mint and cilantro leaves, two shrimp, and a small handful of spiralized carrot and zucchini in the center of the wrapper.
- Fold the sides of the wrapper over the filling, then fold in the edges to fully encase the ingredients.
- Tightly roll the wrapper from the bottom up. Repeat with remaining wrappers and filling.
- Slice the finished rolls diagonally and serve immediately with the prepared dipping sauce.
