Bean and Cheese Burritos
Hearty and satisfying, these bean and cheese burritos are a quick and easy meal perfect for any day of the week.
Ingredients
- 4 flour tortillas
- 15 oz canned refried beans
- 1 cup shredded cheddar cheese
- ½ cup salsa (optional)
- ¼ cup sour cream (optional)
- 2 green onions (optional)
- ½ tsp cumin
- ½ tsp chili powder
- ¼ tsp salt
Steps
- Warm the refried beans in a small saucepan over medium heat, stirring occasionally, until heated through. Stir in cumin, chili powder, and salt.
- Warm the flour tortillas either in a microwave for 15-20 seconds each, or in a dry skillet over medium heat for 10-15 seconds per side, until pliable.
- Lay out each warm tortilla. Spread about 1/4 of the refried bean mixture evenly over the center of each tortilla.
- Sprinkle about 1/4 of the shredded cheddar cheese over the beans on each tortilla.
- Fold in the sides of each tortilla, then roll it up tightly from the bottom to form a burrito.
- Serve immediately with optional salsa, sour cream, or chopped green onions.
