Bean and Cheese Burritos

Ingredients

  • 4 flour tortillas
  • 15 oz canned refried beans
  • 1 cup shredded cheddar cheese
  • ½ cup salsa (optional)
  • ¼ cup sour cream (optional)
  • 2 green onions (optional)
  • ½ tsp cumin
  • ½ tsp chili powder
  • ¼ tsp salt

Steps

  1. Warm the refried beans in a small saucepan over medium heat, stirring occasionally, until heated through. Stir in cumin, chili powder, and salt.
  2. Warm the flour tortillas either in a microwave for 15-20 seconds each, or in a dry skillet over medium heat for 10-15 seconds per side, until pliable.
  3. Lay out each warm tortilla. Spread about 1/4 of the refried bean mixture evenly over the center of each tortilla.
  4. Sprinkle about 1/4 of the shredded cheddar cheese over the beans on each tortilla.
  5. Fold in the sides of each tortilla, then roll it up tightly from the bottom to form a burrito.
  6. Serve immediately with optional salsa, sour cream, or chopped green onions.
