Beef and Broccoli Stir-Fry
A classic Chinese stir-fry featuring tender marinated beef and crisp-tender broccoli in a savory oyster sauce.
Ingredients
- 1 lb sirloin steak
- 1 lb broccoli
- 2 clove garlic
- 2 tsp soy sauce
- 2 tsp dry sherry
- 1½ tsp cornstarch
- ⅛ tsp black pepper
- 2 tbsp oyster sauce
- ¼ cup chicken broth
- 2 tbsp high heat cooking oil
- 1 tbsp water
Steps
- Slice beef thinly against the grain. In a bowl, combine 1 tsp soy sauce, 1 tsp dry sherry, 0.5 tsp cornstarch, and 0.125 tsp black pepper. Add beef and marinate for 10 minutes.
- In a separate small bowl, whisk together 2 tbsp oyster sauce, 1 tsp dry sherry, 1 tbsp soy sauce, and 0.25 cup chicken broth for the sauce.
- Bring a pot of water to a boil. Add broccoli florets and cook for 2 minutes until crisp-tender. Drain well and set aside.
- Heat a large wok or frying pan over high heat. Add 2 tbsp cooking oil and swirl to coat.
- Add marinated beef to the hot pan, spreading it in a single layer. Cook undisturbed for 1 minute, then flip. Add minced garlic and cook for another 30-60 seconds until beef is no longer pink.
- In a small cup, dissolve 1 tsp cornstarch in 1 tbsp water. Pour the prepared sauce and the cornstarch slurry into the pan with the beef.
- Stir continuously until the sauce boils and thickens, about 30 seconds. Add the blanched broccoli and toss to coat.
- Serve immediately, optionally with steamed rice.
