Beef Enchiladas
Hearty beef enchiladas baked in a savory red sauce and topped with melted cheese, a classic comfort food.
Ingredients
- 1 lb ground beef
- ½ onion
- 2 clove garlic
- 2 tsp chili powder
- 1 tsp cumin
- ½ tsp salt
- ¼ tsp black pepper
- 8 flour or corn tortillas
- 15 oz red enchilada sauce
- 1½ cup shredded cheddar cheese
- 1 tbsp olive oil
Steps
- Preheat oven to 375°F (190°C).
- Brown ground beef in a large skillet over medium heat. Drain fat. Add chopped onion and minced garlic, cooking until softened. Season with chili powder, cumin, salt, and pepper.
- Pour a thin layer of enchilada sauce into the bottom of a 9x13 inch baking dish.
- Fill each tortilla with about 1/4 cup of the beef mixture and a sprinkle of cheese. Roll them up tightly and place seam-side down in the baking dish.
- Pour remaining enchilada sauce over the rolled tortillas and top generously with the rest of the shredded cheese.
- Bake for 20-25 minutes, or until the cheese is bubbly and lightly golden.
- Let stand for 5 minutes before serving.
