Beef Enchiladas

Hearty beef enchiladas baked in a savory red sauce and topped with melted cheese, a classic comfort food.

Ingredients

  • 1 lb ground beef
  • ½ onion
  • 2 clove garlic
  • 2 tsp chili powder
  • 1 tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • 8 flour or corn tortillas
  • 15 oz red enchilada sauce
  • 1½ cup shredded cheddar cheese
  • 1 tbsp olive oil

Steps

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef in a large skillet over medium heat. Drain fat. Add chopped onion and minced garlic, cooking until softened. Season with chili powder, cumin, salt, and pepper.
  3. Pour a thin layer of enchilada sauce into the bottom of a 9x13 inch baking dish.
  4. Fill each tortilla with about 1/4 cup of the beef mixture and a sprinkle of cheese. Roll them up tightly and place seam-side down in the baking dish.
  5. Pour remaining enchilada sauce over the rolled tortillas and top generously with the rest of the shredded cheese.
  6. Bake for 20-25 minutes, or until the cheese is bubbly and lightly golden.
  7. Let stand for 5 minutes before serving.
