Ingredients

  • 1¼ lb beef sirloin steak
  • 8 oz soba noodles
  • 4 cup broccoli florets
  • 2 carrots
  • 1 bell pepper
  • 3 clove garlic
  • 1 inch fresh ginger
  • ½ cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • ½ tsp red pepper flakes (optional)
  • 1 tsp sesame seeds (optional)

Steps

  1. Slice beef against the grain into thin strips. In a bowl, whisk together soy sauce, rice vinegar, sesame oil, and cornstarch. Add beef strips and marinate for at least 10 minutes.
  2. Cook soba noodles according to package directions, then drain and rinse with cold water to prevent sticking.
  3. Chop broccoli into florets, slice carrots into thin rounds or matchsticks, and thinly slice the bell pepper. Mince garlic and grate ginger.
  4. Heat vegetable oil in a large skillet or wok over medium-high heat. Add beef and stir-fry until browned, about 3-4 minutes. Remove beef from skillet and set aside.
  5. Add broccoli, carrots, and bell pepper to the skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp. Add garlic, ginger, and red pepper flakes (if using) and stir-fry for 1 minute more until fragrant.
  6. Return beef to the skillet. Add the cooked soba noodles and toss everything together to combine, ensuring the sauce coats all ingredients.
  7. Serve immediately, garnished with sesame seeds if desired.
