Beef Stir-fry with Soba Noodles
A quick and savory beef stir-fry tossed with buckwheat soba noodles and crisp vegetables.
Ingredients
- 1¼ lb beef sirloin steak
- 8 oz soba noodles
- 4 cup broccoli florets
- 2 carrots
- 1 bell pepper
- 3 clove garlic
- 1 inch fresh ginger
- ½ cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp cornstarch
- 2 tbsp vegetable oil
- ½ tsp red pepper flakes (optional)
- 1 tsp sesame seeds (optional)
Steps
- Slice beef against the grain into thin strips. In a bowl, whisk together soy sauce, rice vinegar, sesame oil, and cornstarch. Add beef strips and marinate for at least 10 minutes.
- Cook soba noodles according to package directions, then drain and rinse with cold water to prevent sticking.
- Chop broccoli into florets, slice carrots into thin rounds or matchsticks, and thinly slice the bell pepper. Mince garlic and grate ginger.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add beef and stir-fry until browned, about 3-4 minutes. Remove beef from skillet and set aside.
- Add broccoli, carrots, and bell pepper to the skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp. Add garlic, ginger, and red pepper flakes (if using) and stir-fry for 1 minute more until fragrant.
- Return beef to the skillet. Add the cooked soba noodles and toss everything together to combine, ensuring the sauce coats all ingredients.
- Serve immediately, garnished with sesame seeds if desired.
