Spicy Peanut Chicken
A quick and flavorful dish featuring tender chicken coated in a rich, spicy peanut sauce, perfect over rice.
Ingredients
- 1½ lb boneless, skinless chicken breasts
- ½ cup peanut butter
- ¼ cup soy sauce
- 2 tbsp rice vinegar
- 2 tbsp honey
- 1 tbsp sesame oil
- 1 tbsp fresh ginger
- 2 clove garlic
- 1 tbsp sriracha
- ¼ cup water
- 1 tbsp olive oil
- 1 red bell pepper
- 2 cup broccoli florets
- 4 cup cooked rice (optional)
- 2 green onions (optional)
- 1 tsp sesame seeds (optional)
Steps
- Whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, grated ginger, minced garlic, sriracha, and water in a bowl to create the peanut sauce.
- Cut chicken breasts into 1-inch pieces. Heat olive oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add sliced red bell pepper and broccoli florets to the same skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
- Return chicken to the skillet. Pour the peanut sauce over the chicken and vegetables, stirring to coat evenly. Bring to a simmer and cook for 2-3 minutes until the sauce thickens slightly.
- Serve immediately over cooked rice, garnished with chopped green onions and sesame seeds, if desired.
