Spicy Peanut Chicken

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • ½ cup peanut butter
  • ¼ cup soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 1 tbsp fresh ginger
  • 2 clove garlic
  • 1 tbsp sriracha
  • ¼ cup water
  • 1 tbsp olive oil
  • 1 red bell pepper
  • 2 cup broccoli florets
  • 4 cup cooked rice (optional)
  • 2 green onions (optional)
  • 1 tsp sesame seeds (optional)

Steps

  1. Whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, grated ginger, minced garlic, sriracha, and water in a bowl to create the peanut sauce.
  2. Cut chicken breasts into 1-inch pieces. Heat olive oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add sliced red bell pepper and broccoli florets to the same skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  4. Return chicken to the skillet. Pour the peanut sauce over the chicken and vegetables, stirring to coat evenly. Bring to a simmer and cook for 2-3 minutes until the sauce thickens slightly.
  5. Serve immediately over cooked rice, garnished with chopped green onions and sesame seeds, if desired.
